When our artisan bakers and confectioners bake bread, rolls, snacks and cake specialties for you, they have high standards – for themselves, for each of our MOSS products and for each ingredient. You experience MOSS craftsmanship in every dough, in its preparation we only use machines where manual work cannot do it better. You taste pure flavors because we do not use premixes and ready-made products in our baked goods, nor additives and dough acidifiers. We want to maintain the regional baking culture for you with elaborate recipes and baking processes And because this is a matter close to our hearts, we employ an above-average number of master bakers and journeymen and are a committed training company.

The Secrets of Really Good Bread

As a craft bakery, we are particularly proud of our breads. We make no secret of our philosophy: every MOSS bread has its own character and is baked by hand using the best ingredients and according to old family recipes. You can taste it. You can feel it. And we are guided by these six principles:

  1. We live the craft, because every MOSS dough is made in the best craftsmanship quality and machines are only used where handwork could not do a better job.
  2. We bake with flour from the region – without additives or dough acidifiers.
  3. We cultivate a baking culture with elaborate recipes and baking processes. That is why we employ an above-average number of master bakers and journeymen.
  4. We love freshness! That's why we deliver fresh baked goods to every MOSS branch up to three times a day.
  5. We appreciate the (dough) rest. The unique MOSS freshness and juiciness also comes from the fact that our bread doughs are given plenty of time to mature.
  6. We like the whole grain. That's why we always use wholemeal rye flour. We also use wholemeal wheat and spelt flour in many other MOSS breads.
